1 whole chicken
1/2 onion, quartered
1 head of garlic, cut lengthwise
2 Tbsp butter, cut up
Heat the oven to 425. Wash and pat the chicken dry. Place onion and garlic inside the cavity of the chicken. Pull the skin back gently and place some butter on each side. Cook for an hour and half. If the chicken is getting too dark cover with foil.
