These are always a hit and they are very simple to make, especially if you already have the oven on.

4 large sweet potatoes, peeled and cut into bite-sized pieces
olive or canola oil
salt and pepper
Heat the oven to 425. Place the sweet potatoes in a large dish in a single layer. Coat with oil and sprinkle with salt and pepper. Cook for 30 minutes or until the potatoes are cooked through and crispy.
